All that’s left is to add a few fresh touches, stir with care, and finish with butter or a drizzle of fine EVOO.

The result? A restaurant-worthy dish that’s as indulgent as it is easy to prepare.

🌿 Ingredients (Serves 2–3)

  • 1 package Porcini Truffle Mushroom Risotto
  • 2 tbsp Olive The World Extra Virgin Olive Oil (or infused oil, like Roasted Garlic EVOO)
  • 2 tbsp unsalted butter (divided)
  • 1 shallot, finely chopped
  • 1 cup mixed fresh mushrooms (cremini, shiitake, or button), sliced
  • ½ cup dry white wine (optional, but recommended)
  • 3–4 cups warm vegetable or chicken stock
  • ¼ cup freshly grated Parmesan cheese
  • Salt & black pepper, to taste
  • Optional garnish: a pinch of truffle zest or extra EVOO drizzle

🔪 Directions

  1. Sauté the aromatics
    • In a large skillet or heavy saucepan, heat 1 tbsp butter + 2 tbsp EVOO over medium heat.
    • Add the shallot and cook until soft and translucent, about 2–3 minutes.
    • Stir in the fresh mushrooms and cook until golden and fragrant.
  2. Toast the risotto base
    • Add the contents of the Porcini Truffle Mushroom Risotto package to the pan.
    • Stir for 1–2 minutes to coat the rice and lightly toast it, enhancing flavor.
  3. Deglaze (optional)
    • Pour in white wine, stirring until mostly absorbed. This adds acidity and depth.
  4. Build the risotto
    • Add ½ cup warm stock at a time, stirring frequently.
    • Once absorbed, continue adding stock gradually, stirring, until the rice is creamy and al dente (about 18–22 minutes).
  5. Finish with richness
    • Remove from heat, stir in the remaining 1 tbsp butter and grated Parmesan.
    • Taste and adjust with salt and pepper.
  6. Serve with flair
    • Spoon risotto into shallow bowls.
    • Finish with a drizzle of EVOO or a sprinkle of truffle zest for an aromatic touch.

✨ Serving Ideas

  • Pair with a crisp glass of Pinot Grigio or Sauvignon Blanc.
  • Serve alongside roasted chicken or seared scallops for a decadent meal.
  • For a vegetarian feast, add sautéed spinach or roasted asparagus on top.
